Sektörde yatırım yapmak isteyen bir yatırımcı neden sizin markanızı tercih etsin?

Yatırım yapmak isteyenleri iki başlıkta değerlendiriyoruz. Birincisi; hizmet verdiğimiz sektör. İkincisi de markamızın yatırımcıya bakış açısı. Kahve sektörü hızla büyüyen ve Avrupa ortalamasının hala gerisinde olan bir sektör. Haliyle kişi başına düşen kahve tüketim oranının Türkiye’de 2014’den bu yana 350 gr’dan yaklaşık 1,5 kilolara geldiğini görüyoruz. Avrupa ortalamasında ise kişi başına düşen yıllık kahve tüketim oranı da 8 kg. civarında. Özellikle artan personel maliyetleri nedeniyle az personelle self-serviste hizmet veren sektörümüz Türkiye’de kıymetli bir yerde diyebilirim. Ancak bu genel bakış açısı ve makrodaki değerimiz. Mikrodaki değerimiz ise biz yatırımcımıza bir yatırımcı gibi değil, iş ortağı gibi, sanki şirketimizden hisse verdiğimiz bir hissedarımız gibi bakıyoruz. Sadece iyi gün dostu değil, aynı zamanda kötü gün dostuyuz. Yatırımcımızı destekleme konusunda ve iş ortaklığı kısmında da lider bir bakış açısına sahibiz. Bunun dışında franchise mantığını özümsemiş, sindiren, kurumsallaşan, bunla ilgili tüm birimlerini kuran ve sürekli bir girişim firması olarak kendi işine, sektör liderliğine, “Fark Yarat, Öncü Ol” sloganına uygun yatırımlar yapan bir firmayız. Bayilik/ franchise için ne istiyorsunuz? Gerekli Şartlar nelerdir?

Biz öncelikle para odaklı bir firma değiliz. Yani; doğru, prestijli, itibarlı bir şekilde doğru kişilerle yaptığın iş sonucunda gelen para bizim için kıymetlidir. Bu bağlamda da bizden sadece parayla kimse franchise alamaz. Biz de bu şekilde franchise vermeyiz. Bize gelen talepleri 3 basit aşamada değerlendiriyoruz.1.’si; karşılıklı beklentiler ve iletişim anlamında yatırımcı doğru mu? Yatırımcımız doğru ise, ikinci olarak yatırımcının yatırım yapmak istediği yer doğru mu? Buna bakıyoruz. Yer seçimi doğru değilse yatırımcıdır nasılsa parayı o veriyor demeyiz. Son olarak da yerin kiralama şartları doğru mu diye bakıyoruz. Bizim yatırım amortismanda 3 yılın altında yatırım amorti etme gibi bir planlamamız var. Buna uygun olmayan yerlerde yatırımcı ben bunu kabul ediyorum dese de kiralama yapmıyor ve Franchise vermiyoruz. Çünkü, biz her şube kendimizinmiş gibi, bir gün kendimiz alıp işletecekmişiz gibi bakıyoruz. Bu bakış açımızı her yerde sürdürdüğümüz için hem yatırımcımızı, hem de markamızı koruyoruz. Franchise pazarında kendinizi farklılaştırmayı nasıl başarıyorsunuz?

Bizim sloganımız ‘Fark Yarat, Öncü Ol’. Bu bağlamda bizim şubelerimizde görünen yüzümüz, ön bahçemiz. Bizim arka bahçemiz o kadar büyük ki. Arka planda sektör liderliğine oynuyor ve aslında sektörün, baristalığın itibarlı bir hale gelmesi için çok ciddi çabalar sarf ediyoruz. Bunun dışında dışa bağımlılığımızı yüzde 20 ve altına çekecek yatırımlar yapıyoruz. Lojistik üstüne kahve üretim tesisimizle beraber kendi kahvelerimizi ithal eder haldeyken, sos-toz grup ana üretimlerimizi kendi markamızla üretiyoruz. Bu süreçte güneş enerjisi santrali kurup şubelerimizin elektrik ihtiyacını uygun ve stabil bir şekilde karşılayabilmekten, iyi tarım ve sonrasında organik tarıma geçecek tarlamızda yetiştirdiğimiz elmalarımızla, yeni kurduğumuz gıda-üretim tesisimizde ürünler üretmeye kadar sürekli girişim ve ar-ge firması gibi çalışıyoruz. Standart bir kafe, işletme gibi değil de bir ar-ge, girişim firması gibi hareket ediyoruz. Bu ar-ge bakış açımız bizi ür-ge ye de itiyor. Bu kapsamda çok ciddi bir yatırımla gıda-üretim tesisi kurduk. Bu gıda-üretim tesisimizde artık kendi ekmeklerimizi, sandviçlerimizi, tatlılarımızı, eklerlerimizi, donutlarımızı, kruvasanlarımızı, çikolatalarımızı, kasa önü satışlarımızı, cup ürünlerimizi. light-vegan ürünlerimizi üretecek ciddi bir hale geldik. Bizde olan ürünlerin hiçbir yerde olmayacağı; bize özgü ürünlerle teşhir dolaplarımızı, şubelerimizi renklendireceğimiz çok ciddi de bir yatırım yaptık. Bunun dışında Birleşmiş Milletler ve MEB yanı sıra belediyelerle iş ortaklığıyla nitelikli istihdam çalışmaları yapıyoruz. Baristalığın bir meslek haline gelip, meslek liselerinde bir ders olarak okutulması sürecinin müfredat yazımından tutun, öğretmenlerin eğitimine ve ilk barista sınıfının oluşumuna kadar tüm süreçleri biz yürüttük. Bu kadar rekabetin arttığı, yeni aktörlerin sisteme girdiği bir halde dahi genel anlamda cirolar çok aldatıcı olabiliyor. Bunun nedeni de sürekli fiyatların değişmesi. Biz bu durumdan bağımsız müşteri sayımızı arttıran bir haldeyiz. Haliyle de yatırım-amortisman süremiz enflasyonist bir ortamda dahi şu an çok iyi bir yerde. Biz menü fiyatlarımızda değişiklik yapmadan yatırımcımıza fiyat geçişi yapmayan, iş ortaklığında kazan-kazana inanan bir firmayız. Sektörde çok ciddi bir pazar payımız var.

Marka, bilinirliliğinin ne kadarını etkilemekte?

Orada kasa yazımızdan dilimize kadar yer edinmeye dair çok ciddi emek sarf ediliyor. Oranın da kendi içinde bir konjonktürü, mevzuatı ve yerel dinamikleri var. Buna uygun davranıyoruz.
